The Babos sparkling wine is 100% Istrian Malvasia. The grapes are harvested as soon as the end of August in order to maintain high acids which are indispensable for a good sparkling wine. The production method is Charmat. The wine is labeled “extra dry”, has a lovely straw yellow colour, crystal clear towards shiny. Distinguished by a lovely perlage with a lot of tiny, long-lasting bubbles. The wine has a partially pronounced intense and pleasant scent. Floral aromas dominate, with a zest of citrus and dry fruit and just a trace of yeast, with partially rich complexity. The final result is an excellent sparkling wine, ready for consumption.

Knowledge of modern technology of grapes, the specific varieties and maintenance of wine preparations Matteo met through schooling in Udine, where he graduated in enology. Their business is improving trough costant work, dividing tasks and constant education. While Matteo devoted his time to the monitoring of wine properties, Luca works on the marketing and presentation of many products from their supply.
